Mudhi Mansa is one of the iconic snack dishes of Odisha. It is an exclusive delicacy in “Baripada” a town situated in the Mayurbhanj district of Odisha. The delicious mutton curry (Mansa) with onions, green chillies and fresh coriander is savoured with Mudhi or puffed rice
Ingredients :
- Goat Meat 250 gms
- Large Onion,finely chopped 1 nos
- Tomato chopped(optional) 1 nos
- Mustard Oil 1 cups
- Garam Masala 1 tsp
- turmeric powder 1 tsp
- Red Chili Powder 2 tsp
- Potato ,peel and cut into halve 1 nos
- Cinnamon Stick 1 nos
- Bay Leaf 1 nos
- Cardamoms 2 nos
- Cloves 2-3 nos
- Pufffed Rice 2 cups
- Coriander Leaves 2-3 tsp
- Sugar /2 tsp
Directions :
- Marinate goat meat with 3 tsp mustard oil, turmeric powder and red chilli powder over night or 5 hrs
- In a pressure cooker take mustard oil and increase the flame to high mode so that the mustard smell goes off.
- Shallow fry potatoes and keep them aside.
- In same oil sugar and let it carameluze , next add all the spices( cardamom, bay leaf, cinnamon , cloves)
- Add onions and tomato. Let it turn soft and mushy.
- Next add marinated meat with some salt to taste.
- Add 1 cup of water and pressure cook for 5-6 whistles
- Open and add garam masala and chopped coriander
- Serve with puffed rice and garnish with chopped tomatoes, onion, chopped green chilly if you like spicy. You can add farsan or sev if you want
